Just read this great article about “Restaurant Day”. A one day a year event in Helsinki where hundreds of pop-up restaurants appear for one day around the city. From a woman who lowers breakfast sandwiches from her window, to full fledged sit down style experience. All the pop-ups are displayed on an app, with what they’re selling, location, etc. Super cool idea. It’s like a headless Underground Market. We should have that here.
